Zucchini Boat Pizza

These zucchini pizza boats are fun, delicious and full of nutrients! Zucchini is such a versatile veggie, and makes the perfect delivery system for all your favourite traditional pizza toppings!

This recipe manages to include almost 30g of protein and is full of flavour thanks to the sausage, veggies and olives. 

In terms of micro nutrients, the mushrooms provide vitamins B5, and B6, bell peppers offer vitamin C, red onion provides us with the antioxidant quercitin and green olives offer healthy monounsaturated fats and two different antioxidants. 

Who ever said healthy food can't also be delicious?!?
Ingredients:
  • 4 Zucchini (medium)
  • 1 lb Pork Sausage
  • 2 Garlic (cloves, minced)
  • 1 tsp Italian Seasoning
  • 3/4 cup Tomato Sauce
  • 8 oz Mozzarella Cheese (grated)
  • 1/2 cup Mushrooms (thinly sliced)
  • 1/4 Green Bell Pepper (chopped)
  • 2 tbsps Red Onion (chopped)
  • 1/4 cup Green Olives (sliced)


Directions:
  1. Preheat the oven to 375ºF (190ºC) and line a baking sheet with parchment paper.
  2. Scoop the seeds out of the zucchini and discard. Place the zucchini on the prepared baking sheet cut side up.
  3. In a pan over medium-high heat brown the sausage. Add the garlic and Italian seasoning and cook for another minute. Add the tomato sauce and stir to combine.
  4. Sliced the sausages into 1/4" slices. Divide the sausage slices between the scooped out zucchini. Top with cheese, mushrooms, bell pepper, onions and olives. Bake for 23 to 25 minutes or until the cheese has melted and the zucchini is tender. Divide between plates and enjoy!
