Turkey & Broccoli Casserole

Picture
This recipe was originally created as a breakfast dish.

However I don’t believe that we need to categorize foods into breakfast, lunch and dinner, and this casserole works beautifully at any time of the day!

You can easily swap the ground turkey for other ground meats and the broccoli for other veggies like cauliflower, mushrooms or brussel sprouts.
Ingredients

Extra Virgin Olive Oil, 2 Tablespoons
Ground turkey, lean, 300 Grams
Broccoli, 1 1⁄2 Cup, Chopped
Red pepper, 1⁄2 Small
Scallions, 2 Medium - 4 1/8" long
Raw egg, 5 Medium
Heavy cream, 1⁄4 Cup
Crushed Red Pepper Flakes, 1 Teaspoon
Salt, 1 Teaspoon
Black pepper, 1⁄2 Teaspoon
Mozzarella cheese, whole milk, 1⁄2 Cup, Shredded
Cream cheese, brick, 2 Tablespoons

Directions
  1. Preheat your oven to 350 F/180 C and line a casserole dish with baking paper. Add the oil to a nonstick pan over medium-high heat. Add the ground turkey, and cook for 4-5 minutes until golden.
  2. Transfer the cooked meat to a large bowl. Cut the broccoli into small florets, dice the bell pepper, and slice the scallion. Add them to the bowl. Add the eggs, heavy cream, crushed red pepper, salt, and black pepper. Mix to combine. Pour the mixture into the prepared casserole dish.
  3. Sprinkle the cheese on top. Transfer the dish to the oven.
  4. Bake for 35-40 minutes until an inserted toothpick comes out clean, and the cheese is golden.
  5. Place the casserole dish on the counter and let it cool for a couple of minutes. Cut into 4 slices and top each with ½ tbsp cream cheese. Garnish with more sliced scallion and crushed red pepper.
