Spider Web Pumpkin & Chicken Soup

Thought I'd share this fun Halloween inspired,  nourishing, sugar free option!

​Fun for adults and children alike, enjoy the holiday without letting it be all about the candy. 
Ingredients
Boneless Skinless chicken breast, 16 Ounces
Coconut Oil, 2 Tablespoon
Pumpkin Puree, 2 1⁄4 Cups  
Chicken broth, 3 Cups  
Coconut Milk, Unsweetened, 1⁄4 Cup
Ginger, ground, 1 Teaspoon
Sage, ground, 1 Teaspoon
Sea salt, 1⁄2 Teaspoon
Black pepper, 1⁄4 Teaspoon
Sliced Black Olives, 1⁄4 Cup  
Pumpkin seeds, 1⁄4 Cup  
Hemp seeds, 1⁄4 Cup
 
Directions
  1. Dice the chicken into bite size pieces.
  2. In a large pot, heat coconut oil over medium heat. Add the chicken and cook for 45 minutes, stirring occasionally. Stir in pumpkin, broth, ginger, sage, salt and pepper.
  3. Bring to a boil and let simmer for about 20 minutes. Divide the pumpkin soup into separate bowls.
  4. Meanwhile, slice your black olives and set aside for garnish.
  5. Put the coconut milk into a squeeze bottle and draw a spiral in each bowl of soup. Use a toothpick to draw straight lines from the center of each spiral to the outer edges.
  6. Garnish soup with pumpkin seeds, hemp seeds and olive slices in the form of spiders. Enjoy!
