Smoked Salmon & Avocado Tacos

Incorporating healthy fats doesn't have to be complicated or overwhelming.

​This Smoked Salmon & Avocado Taco recipe is perfect for busy days when you need to throw together a quick meal. It will nourish your body with nutrient dense protein & fats and is full of flavour!

Ingredients:
  • 2 Egg (hard boiled, cut into quarters)
  • 1/2 cup Plain Greek Yogurt
  • 2 tbsps Parsley (fresh, chopped; or 1 tsp dried)
  • 2 tbsps Lemon Juice (freshly squeezed)
  • 1/2 tsp Sea Salt & Black Pepper (or to taste)
  • 4 Green Lettuce (large leaves)
  • 1 Avocado
  • 8 oz Smoked Salmon
  • 1 stalk Green Onion (chopped)
  • 1/2 Red Bell Pepper (diced)
  • 1/4 Cucumber (spiralized or thinly sliced)
  • 1/2 cup Cherry Tomatoes (quartered)

Directions: 

  1. Boil your eggs.
  2. Make the dressing: Add the yogurt, lemon juice, parsley, sea salt and black pepper to a bowl and mix or blend using food processor or blender until smooth.
  3. Place 2 lettuce leaves on each plate. Layer remaining ingredients on top of lettuce. Top with dressing, hard boiled eggs and additional sea salt and black pepper to taste. Enjoy!

Serves 2.

Looks great. Any suggestions as to where I can pick up smoked salmon that doesn’t contain sugar?

I've found a couple of varieties at Zehrs that have zero added sugar - Just be sure to look at the nutrition facts! I stick to products that are 5g or less per 100g, or 1g or less per serving.
