Sardine Stir-Fry

This recipe is a great way to use of those tins of sardines that you purchased because you heard they were healthy, but haven't been brave enough to crack open and try!

Even if you're not a fan of the fishy taste of sardines, this recipe will have you seeing (and tasting) sardines in a whole new light - both my husband and toddler approved of this one!
Not only are sardines full of healthy omega-3 fats, they are also a good source of iron, calcium, B12 and Vitamin D. These little fish definitely pack a punch when it comes to nutrients! Add in the combination of coconut and aromatic, warming spices, AND the fact that this recipe comes together in less than 15 minutes, this dish is hands down a real winner!

Ingredients:
  • 2 tbsp Coconut Oil
  • 1/2 tsp Mustard Seed
  • 1/2 Yellow Onion (finely chopped)
  • 1 Garlic (clove, minced)
  • 1 Ginger (inch, minced)
  • 1/2 Bell Pepper (chopped)
  • 1 tbsp Curry Powder
  • 1/2 cup Unsweetened Shredded Coconut
  • 1 tsp Salt
  • 1/2 tsp Turmeric
  • 1/2 tsp Coriander powder
  • 1 tsp Garam Masala
  • 8 oz Sardines (or 2 tins - in extra virgin olive oil)

Directions:
  1. Melt coconut oil in a pan over medium-low heat, then add mustard seeds.
  2. Once they begin to splutter, add the onions, garlic, ginger, bell pepper and curry powder. Mix well and after 2 minutes, add the remaining ingredients.
  3. Mash the sardines with a fork to combine with other ingredients. Stir-fry for another 5 minutes or so. Divide between bowls and enjoy!​

Serves 2.
