Quick & Easy Salmon Patties

These Quick & Easy Salmon Patties are great for breakfast, lunch or dinner!

They are kid-approved and go great over a green salad, with your favourite veggies (I like them with broccoli & cheese), or as a standalone meal!

I suggest serving them with coconut milk (or cream) as a dipping sauce, but if you're not a coconut fan you could also use mayo. 

These patties freeze well so I like to make a double batch, and then just pull them out of the freezer and reheat when I need them. 
Ingredients
  • 320g (two cans) Wild Pink Salmon, (11.29oz) ( I like Raincoast Trading)
  • ½ cup Coconut Milk, Unsweetened (I like Thai Kitchens)
  • 6 Large eggs
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Chives, dried or dehydrated
  • 1 tsp Parsley, dried
  • 4 slices of Lemon
  • ¼ tsp Sea salt & Black pepper
 
Instructions
1. Preheat oven to 350. Line baking sheet with parchment paper
2. In large mixing bowl, combine salmon, eggs, chives and parsley
3. Using your hands, form salmon mixture into 2-inch patties and place on parchment. Bake for 20-22 minutes, or until they are golden brown and crispy; flipping halfway
through.
4. Serve with squeeze of lemon, and coconut milk for dipping. Enjoy!
