Liver & Beef Meatballs

Meatballs are a favourite in my house. They are easy to make and fun for both kids and adults alike. 

The liver in this recipe is a nutrient powerhouse! Liver provides us with vitamin B12, iron, folate, choline and Vitamin A to name just a few.

More importantly, these are nutrients that are often missing in the standard North American diet as they either aren't available or are not well absorbed from common foods such as plants or muscle meats, or synthetic supplements.



Ingredients:

  • 4 ozs Chicken Liver
  • 3 slices Bacon
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp parsley
  • 1/2 tsp Sea Salt
  • 2 lb Extra Lean Ground Beef
  • 1/2 Yellow Onion (finely chopped)
  • 1 tsp curry (optional)

Directions:

  1. Preheat the oven to 350ºF (176ºC).
  2. Add the chicken liver, bacon, garlic powder, onion powder, parsley, curry (if using) and salt to a food processor and blend until mostly smooth.
  3. Place the beef in a large mixing bowl. Add the liver mixture and chopped onion and mix until very well combined.
  4. Form the meat mixture into tightly-packed balls, about 1-inch in diameter. Use damp hands to make rolling easier. Place in a high-sided baking dish.
  5. Bake for 18-25 minutes or until the meatballs are cooked through. Enjoy!
