Lemon & Dill Baked Salmon

You are likely aware that fish is "heart healthy", but have you ever wondered why?

Cold-water fatty fish such as salmon is supportive for the heart and cardiovascular system because it is rich in omega-3 fats (which can be further broken down into EPA and DHA).

These fats have many benefits including anti-inflammatory effects, helping to prevent Alzheimer’s and autoimmune diseases, and are extremely important for brain development and preservation.

​This recipe is simple, but is a beautiful combination of flavours for a nourishing and satisfying meal. 

Ingredients:

  • 10 ozs Salmon Fillet
  • 2 tbsps Ghee (melted; or butter)
  • 1 Garlic (cloves, minced)
  • 1 tbsp Fresh Dill (chopped)
  • 1/2 Lemon (zested and juiced)
  • Sea Salt (to taste)
  • 2 cups Mixed Greens

Directions:
  1. Preheat the oven to 375ºF (191ºC).
  2. Line a baking sheet with parchment paper and place the salmon in the middle.
  3. In a small jar, mix together the melted ghee, garlic, dill, lemon juice, lemon zest and sea salt. Pour it over the salmon. Fold up the edges of the paper so that the fish is sealed in a pouch. Bake for 15 to 20 minutes or until fish flakes with a fork.
  4. Remove the salmon from the oven and serve with mixed greens. Enjoy!
