Hearty Lemon-Spinach salad

This hearty salad combines many of the great tastes of summer; fresh herbs, greens, and lemon!
With 17g of protein per serving it's sure to please your taste-buds and keep you satisfied!

Enjoy this as a light meal, or as a side at your next BBQ!

Ingredients

  • 1/2 Lemon (juiced)
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp Dijon Mustard
  • 1 tsp Maple Syrup
  • 2 tbsp Fresh Dill (chopped)
  • 2 cups Baby Spinach (chopped)
  • 1 cup Chickpeas (cooked)
  • 1 cup Fresh Green Peas 

Directions

  1. In a large mixing bowl, whisk together the lemon juice, avocado oil, dijon, maple syrup and dill.
  2. Toss in the spinach, chickpeas and green peas until well combined. Enjoy!
Makes 2 servings.
