Guacamole & Veggie Sticks

 Avocados, which are the basis of guacamole, are full of monounsaturated fats which are anti-inflammatory when they come from whole foods like avocados. Avocados are also a great source of potassium and magnesium - both of which are electrolytes that the heart needs to function properly. They are also rich in glutathione, which is an antioxidant that the body uses for a variety of functions.

My 'guac' recipe is super simple, but absolutely delicious!
Using fresh ingredients is recommended here, but if you only have dried versions of the spices available it will still be yummy!

​Ingredients:
  • 1 Red Bell Pepper
  • 2 stalks Celery (medium)
  • 2 Carrot (medium)
  • 2 Avocado
  • 1 small tomato or a handful of cherry tomatoes (diced)
  • 1/2 cup Plain Greek Yogurt
  • 1/2 a small red onion (diced)
  • 1 tsp minced garlic (or 1/2 tsp garlic powder)
  • 1 Lime or 1/2 a lemon (juiced)
  • 1/4 tsp Sea Salt (or more to taste)

Directions:
  1. Peel and slice bell pepper, celery and carrots into sticks.
  2. Peel and pit the avocado. Mash the flesh in a small bowl with the remaining ingredients (add diced tomatoes if using).
  3. Dip the veggies into the guacamole & enjoy!
Serves 4.
