Crock-Pot Apple Pork Roast

Apple and pork are two things that are just meant to go together! Although I'm usually not a fan of dinner being 'sweet'; the Sweet Potato-Marshmallow casserole is a dessert in my opinion, not a side-dish!
However, the hint of sweetness from the apple in this recipe is just perfect!

Ingredients
  • 454 grams Pork Butt Roast or Tenderloin
  • 1 Apple
  • 2 large Carrots (sliced or diced)
  • 1 large white potato (diced)
  • 1 Yellow Onion (diced)
  • 1 tbsp Cinnamon

Directions
  1. Cut slits into your pork tenderloin about 3/4 of the way through. Wedge half of the apple slices into the slits.
  2. Add remaining apple, carrots potato and onion to the bottom of the slow cooker. Lay the pork tenderloin on top. Sprinkle cinnamon over everything. Cook on low for 4-6 hours.
  3. Remove pork and vegetables from the slow cooker and divide onto plates. Enjoy!
