BlackBerry Chia Pudding

​As a recovering sugar addict, I'm cautious with my fruit intake as some can trigger me to want more sweetness. 

However, from my professional experience, when it comes to fruit, berries are one of the best choices because they are low in sugar, and high in fiber, antioxidants and other beneficial nutrients. 
This blackberry chia pudding may be great for you if you've got a busy day planned and need something that you can make ahead and pack with you. Pair it with a low-carb food such as hard boiled eggs for a no-fuss protein packed meal! 


Ingredients:
  • 1/4 cup Plain Coconut Milk (canned)
  • 3/4 cups water
  • 3 tbsps Chia Seeds
  • 20g Collagen Powder (2-4 scoops depending or scoop size) 
  • 1 scoop unsweetened/unflavoured protein powder (I like this one)
  • 1/2 tsp Vanilla Extract (optional)
  • 1 cup Blackberries

Directions:
  1. Add the coconut milk, water, blackberries, and vanilla to a blender and blend well until combined.
  2. Pour the blackberry mixture into a medium-sized bowl and add the chia seeds. Whisk well to combine. Divide into smaller jars or bowls and refrigerate for at least 20 minutes to thicken.
  3. Top with additional blackberries if desired. Enjoy!
