Avocado & Smoked Salmon Omelette

Eggs are one of my go-to easy meals for anytime of the day. Eating them Omelette style is one of my favourite ways to enjoy them. 

This avocado and smoked salmon omelette is a wonderful way to "fancy up" a traditional omelette, while also adding in some wonderful healthy fats and extra protein. 

Here I've used parsley and dill for additional flavour, but feel free to use any of your favourite spices & herbs.​
Ingredients:
  • 3 Egg
  • 1 tbsp Butter (or bacon fat)
  • 2 ozs Smoked Salmon
  • 1/4 Avocado (sliced)
  • 1 tbsp Chives (optional, chopped)
  • 1 tsp Dried Dill (optional)

Directions:

  1. In a bowl, whisk the eggs.
  2. Heat the butter in a pan over medium heat. Pour the eggs into the pan and cook until mostly set, about one to two minutes. Flip over and cook for another 30 seconds.
  3. Transfer the omelette to a plate and top with the smoked salmon, avocado, and chives (optional). Enjoy!

Serves 1.
