2 Large eggs
1/8 cup Coconut flour
1/2 tsp vanilla
1 tbsp butter or ghee (preferably pastured, organic)
1.Place all ingredients except ghee in a bowl or a magic bullet and blend.
2.Melt butter or ghee in a skillet over medium-low heat. Add batter and smooth out to desired thickness, making pancakes about 3-4 inches wide.
3.Cook until bubbles appear (2-4 minutes). Flip and cook for additional 2-4 minutes.
4.Add additional ghee if you can’t fit all the batter in one batch.
5.Serve with desired toppings & enjoy!
