5 Ingredient Paleo Pancakes

Pancake Tuesday is approaching I thought I'd offer an alternative to traditional pancakes made with wheat flour, milk, & sugar, as these ingredients can often contribute to inflammation and bloating. How, you ask?

  • Wheat flours contain gluten which irritate and cause damage to the intestinal lining (***you don't have to be diagnosed with celiac, or even have digestive issues for this to be happening)
  • Milk can be poorly tolerated by many people (more so with heavily processed, typical grocery store brands) and can show up as migraines, skin issues like acne, of digestive issues
  • Sugar causes a whole host of problems including cravings, blood sugar irregularities, heart disease, diabetes, & poor sleep.

Ingredients
2 Large eggs
1/2 Banana
1/8 cup Coconut flour
1/2 tsp vanilla
1 tbsp butter or ghee (preferably pastured, organic)
 
Instructions
1.Place all ingredients except ghee in a bowl or a magic bullet and blend.
2.Melt butter or ghee in a skillet over medium-low heat. Add batter and smooth out to desired thickness, making pancakes about 3-4 inches wide.
3.Cook until bubbles appear (2-4 minutes). Flip and cook for additional 2-4 minutes.
4.Add additional ghee if you can’t fit all the batter in one batch.
5.Serve with desired toppings & enjoy!
 
 
*optional toppings
Butter or ghee
Nut butter
Sea salt
Cinnamon
Mixed Berries
 
Makes a single serving of 3-4 pancakes.
