Check out my blog post for more information on Inflammation and bloating, and check out the recipe below for my anti-inflammatory version of pancakes Ingredients
2 Large eggs 1/2 Banana 1/8 cup Coconut flour 1/2 tsp vanilla 1 tbsp butter or ghee (preferably pastured, organic) Instructions 1.Place all ingredients except ghee in a bowl or a magic bullet and blend. 2.Melt butter or ghee in a skillet over medium-low heat. Add batter and smooth out to desired thickness, making pancakes about 3-4 inches wide. 3.Cook until bubbles appear (2-4 minutes). Flip and cook for additional 2-4 minutes. 4.Add additional ghee if you can’t fit all the batter in one batch. 5.Serve with desired toppings & enjoy! *optional toppings Butter or ghee Nut butter Sea salt Cinnamon Mixed Berries Makes a single serving of 3-4 pancakes.
