Don’t throw out your pumpkins! As I was driving home from giving a wellness talk yesterday, I saw something that really made me sad....
An alarming number of people had put their Hallowe’en pumpkins on the curb along with their garbage!
I’m not talking the carved-out jack-o-lanterns, but perfectly good, intact pumpkins!
Why did this make me sad? There are a couple of reasons.
1.This is such a waste of perfectly good food! Our grandparents would never have thrown away food in this way – they would have likely stretched it in a variety of different recipes wasting as little as possible. Which brings me to my next reason;
2.It highlights the wasteful, throw-away mindset of our society. Mainstream media and advertising have us always looking for the next big thing, and we easily throw things away to make room for whatever’s in vogue, and the cycle repeats.
3.Why has the pumpkin become so undervalued? This hearty squash is super versatile and can be made into a variety of meals.....Or beverages. Hello #pumpkinspiceeverything
They are also full of nutrients like potassium, Vitamin C and fibre - all great for digestive health!
