Working in all the hearty nutritional goodness of (pasture raised) eggs supplies a good serving of protein, among other nutrients like Vitamin D, choline, folate, B vitamins & DHA. The combination of eggs and cinnamon make it reminiscent of french toast, while the cauliflower creates the perfect medium for hot cereal. Feel free to play with the recipe by adding and/or swapping in your favourite toppings, like other fruits, nuts, seeds, coconut flakes, or a bit of honey or maple syrup!

1/3 cup riced cauliflower
1/2 cup coconut milk or almond milk, divided
1 small apple, diced
cinnamon, to taste
1/4 - 1/2 tsp turmeric
1 tbsp almond butter, optional
Mix everything except 1/4 cup of coconut (or almond) milk in small sauce pan, on low-medium heat.
Stir frequently until desired consistency - about 7-10 minutes.
Serve in a bowl, with the rest of the coconut (or almond) milk.
